Chicken, Tomato Rotini



I just thought I would share with you, a delicious pasta I made for dinner. It was out of my "Eat Clean Diet" cookbook. It was Chicken, Tomato Rotini. And I have to say it was delicious! So here is a photo, and the recipe!

Ingredients:
- 6 Roma Tomatoes
- 1 Carrot Stick
- 2 Celery Sticks
- 1 Medium Sized Sweet Potato
- 1 Large Onion
- 6 Medium Chicken Tenders (You can use Tofu as well)
- 2 Tbs of Oregano
- Salt and Pepper to taste
- 1/4 Cup Chicken Broth
- 16 oz. Rotini whole grain pasta

Directions:
In a Large skillet, heat extra virgin olive oil and add diced carrots, celery and onion. Sauté them until they are soft, but not brown. Add Sweet potato pulp, Diced tomatoes, chicken broth and spices. Bring to a full boil and add chicken tenders (cut into strips if preferred)Cover tightly and let simmer for 20 minutes. Meanwhile cook rotini noodles. After noodles are cooked, drain and add to tomato mixture!

Vuala! You have a really yummy and health meal!
